Fruit Salsa

I love anything that will allow me to have fun with food and even be healthy. I came across this on pinterest via allrecipes.com  and had to make it for my kiddos. It is now a staple in our household. We make it for breakfast and even afternoon snacks! The kiddos favorite way to make it is to put it on our waffles!

Here is the original recipe:

Fruit Salsa with Baked Cinnamon Chips

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 (16 oz) carton of strawberries, diced
2 tablespoons white sugar (more or less to taste)
1 tablespoon brown sugar (more or less to taste)
3 tablespoons fruit preserves, any flavor (I used strawberry)

10 (10 inch) flour tortillas
melted butter or butter flavored cooking spray

Cinnamon sugar:
1 cup white sugar
2 Tablespoons cinnamon

1. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.

2. Preheat oven to 350 degrees.

3.Coat one side of each flour tortilla with melted butter or butter flavored cooking spray. Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet.

4.Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges.

I followed the recipe but like I always say, fixed it a little bit more for my liking and my families preferences!
Instead of raspberries we used blackberries, just because they were on sale at the store!

Start by cutting up all of your fruit into bite sizes pieces or smaller. I like to have the kiddos  help or you can easily use a food chopper.

Once the fruit is cut, add in the sugar, the preserves and the bown sugar. I cut all of the sugars in half, because I didn't want that much sugar for the kiddos.

The next step is to make the chips. The kiddos love this part as they can really help and I don't have to worry about the amount. Melt buter in the microwave (much faster and more kid friendly), then using a pastry brush or butter knife spread the melted butter all over the tortillas. Sprinkle with cinnamon sugar mixture.

Place in the oven and cook for 8-10 minutes on 350 degrees. When they come out of the oven, use a pizza cutter and cut into chips. You can make as many as you like from the shell. I like to make them into four pieces, the kiddos have an easier time holding them that way.

Put on the table and serve! The best part is it is easy as can be. I try to use it that day or it becomes too watery. If you want to make it ahead of time for an occasion, do not add the fruit preserve and you can store it in the fridge for up to one day and add when you are going to serve!
